About this Cook
Been baking and converting recipes since I was a kid due to food allergies. Now putting my talents to use converting Peruvian recipies and fancy desserts for my diabetic in-laws. I WILL create low/no sugar Dulce de Leche!

Anything fast and easy. If I can use frozen or pre-cut veggies, even better! Love to use up whatever's in my fridge and pantry.

Chicha Morada made so easy Girl Scouts can make it. :) Melt-in-your-mouth beef shanks that weren't overseasoned.
My cooking tragedies
My new electric oven runs a bit colder than my old gas one, so I'm still getting used to it and things have gotten burnt. :(

Peruvian Chicha Morada Drink
Too spicy and citrusy. Reduce cloves to 3 - not spoonfuls, three whole cloves. My mother-in-law doesn't use citrus in her chicha but says her mother-in-law juiced 1 lime directly into hers.

Easy Oatmeal Muffins
Made with the recipe as posted, these were flavorless. This makes a great base recipe, however. I added 1 tsp pure vanilla extract, 1/2 tsp cinnamon (I prefer just a hint of cinnamon; add more for stronger flavor), replaced sugar with dark agave syrup and omitted oil because agave syrup gives enough moisture. Next time I'll replace half the milk with applesauce or overripe, mashed bananas and see how that goes.
