Double Layer Pumpkin Cheesecake

Absolutely delicious! I used a 9 in premade regular pie crust. I folded in 1/4 cup of sour cream after adding the eggs and doubled the amount of cinnamon, vanilla, and nutmeg. I baked mine on top of a cookie sheet with a bit of water in the bottom to prevent cracking. Also, I let my pie cool in the oven with the door open for about half an hour before removing from the oven. I then cooled it for an hour or so on the kitchen counter before refridgerating. I had no cracks but when I went to try a piece exactly 3 hours after I put it in the fridge, it was still slightly warm. You will need to refridgerate for at least 4-5 hours before its the perfect temperature to dig in. I topped mine with store-bought caramel sauce and whipped cream - yum!!!!

Grandma's Banana Bread

So delicious! Moist and sweet! Just like I like it. I followed the recipe exactly. This was my first time making banana bread and I will not be trying any other recipes! The only thing I will do differently is to add nuts when I add the bananas. Yum!

Swordfish a la Siciliana

Delicious! I marinated my steaks for 24 hours with 1/3 cup white wine, 1/4 cup lemon juice, 2 tablespoons soy sauce, and 2 tablespoons olive oil. For the sauce, I doubled the garlic and never set my burner higher than medium. I cooked my swordfish steaks for 30 minutes because they were about 2 1/2 inches thick. They came out perfect. I served this over garlic mashed potatoes with asparagus with hollandaise sauce on the side. My boyfriend said this was the best meal he has had in years!

Garlic Mashed Red Potatoes

Super easy. I left the skins on and subbed 1/2 cup milk for 3/8 milk and 1/8 sour cream. Only problem with the recipe is that there is not enough garlic. Still, a very good recipe and I will use again (with more garlic).

Shrimp Gazpacho

Delicious!!!! I added 2 tablespoons of worcestershire sauce and celery salt and cayenne pepper to taste. Makes for a perfect lunch or even an appetizer when served in small portions.

Four Cheese Margherita Pizza

My new favorite pizza! I made a few adjustments based on what I already had in my cupboard. I halved the recipe to feed 3 people. I used a full 8 ounce package of a 6-cheese italian blend instead of the mozzarella and fontina cheeses. I also used a heavy sprinkling of basil leaves from my spice rack rather than fresh basil leaves. I had four roma tomatoes available but I sliced them thin so I couldn't even fit 3 on my pizza. I am going to use the remaining sliced tomatoes that are already covered with garlic and oil to make bruschetta tonight (I will also use the leftover cheeses from the pizza). I followed someone else recommendation of broiling (only for about a minute and a half) after I baked for 10 minutes. This made the pizza a little crispier than I prefer. I think if my pizza crust was thicker, this would have worked better. Still, it was delicious!!!!

Pesto and Pasta with Lemon and Shrimp

The only change I made to this recipe was cooking my own linguini rather than using the pre-cooked Buitoni linguini. I thought the meal was very boring. The only positive is that this meal is super easy. I used medium peeled cooked shrimp from a bag and I think thats where the recipe goes wrong. I would recommend that you cook and season your own shrimp. Some sort of lemon garlic mixture would be good. Either way, I would not recommend this recipe as is.

Broiled Tilapia Parmesan

Very good dish. I did as others suggested and added paprika and garlic powder. I also peppered my filets before placing them in the broiler. I doubled the cheese sauce and served the extra over steamed broccoli.

Blackened Tuna Steaks with Mango Salsa

This is now my all-time favorite recipe. I followed the suggestions of others and reduced the cayenne pepper by half. The tuna steaks came out medium rare. Next time I will buy sushi-grade meat and cook them a little less so that they are rare. Also, I made this dish for two people so I halved the seasonings for the tuna but made enough salsa for four. I thought we had the perfect amount of salsa for the two of us. I would definitely recommend doubling the amount of salsa. I served this with corn and rice. Loved it!

Cheryl's Spinach Cheesy Pasta Casserole

I changed this recipe as suggested by others and used double the recommended cheese. I topped with a sprinkling of parsley, basil, and oregano and baked about 35-40 minutes. I recommend topping with crushed red pepper flakes before serving. This dish was delicious. My boyfriend nearly ate all of it in one day. I will say that I probably wouldn't serve this as a main dish again. I think it would go nicely with italian sausage or meatballs and sauteed veggies.

Wonderful Fried Fish Tacos

I used tilapia to make my fish tacos and they were delicious. I made my own simple tartar sauce (mayo, relish, lemon juice) and added chili powder to the mixture. I also sprinkled a bit of Rose's lime juice on each taco which ended up being a great addition. Definitely try it!

Sangria! Sangria!

My favorite Sangria recipe. I always leave the cherries and lemonade concentrate out. I am just not a big fan of cherries and I think the lemonade makes it too sweet. I do add a little sugar, about 1/8 of a cup. I also add club soda to each glass for fizz. Love it!
