About this Cook
I LOVE food and have recently realized that I am pretty good at cooking!... Or at least I have really great recipes. I usually get home late from work and rather than watch TV or read a book, I wind down by cooking a fabulous meal and drinking a glass of wine
My favorite things to cook
I pretty much only make vegetarian and pescatarian dishes. I love Mediterranean or Greek, French, and Italian. I prefer to use fresh ingredients and I spend way too much money on groceries.
My favorite family cooking traditions
My Dad makes an awesome sausage and egg breakfast casserole for Christmas. The sausage is homemade (I know - it's gross to imagine) by one of his coworkers. I will never make this dish because it will never be as good as he makes it. I also love cold soup as an appetizer in the summertime.
My cooking triumphs
My entire first year of cooking was a triumph for me. I think it took me so long to start cooking because I was intimidated. Each new dish that was beyond my comfort zone was a triumph for me.
My cooking tragedies
I haven't made any big mistakes while entertaining company. Therefore, I don't really think I've had any experience that I would call a "tragedy". The mistakes I've made in every day cooking have all been learning experiences.

Vidalia Onion Pie
This was my first time having Vidalia Onion pie and I thought it was great! Perfect recipe to use up those extra onions from Costco! No changes are necessary.

Tuna Noodle Casserole from Scratch
Great recipe! I was a little worried there would be too many mushrooms but it was the perfect amount. I really prefer the homemade sauce rather than cream of mushroom soup. As far as tuna casseroles go, this is a winner!

American Lasagna
***This review is for my VEGETARIAN version*** I made this vegetarian by subbing one 8oz package of Smart Ground protein crumbles for the 1.5 pounds of ground beef. It turned out to be just the right amount of "meat" in my opinion. I used 1.5 onions rather than 1 and doubled the basil, oregano, and garlic. I also added one teaspoon of cayenne pepper which added just the perfect amount of spice. I did NOT think this needed more sauce. This could be because I simmered my sauce at a low temperature and added about a half a cup of water half way through. As others have stated, 9 lasagna noodles was perfect. I covered with foil and baked for an hour, then removed foil and baked for another 20 min. Summary: As lasagnas go, this turned out to be very good! I will make this again.
