About this Cook
I come from a big southern family that loves to cook & eat so it's quite a challenge to balance all the delicious eating with a healthy lifestyle. I basically try to eat fruit and a good green salad during the first half of the day so I can enjoy a more indulgent meal for supper. I also make it a habit to replace white flour & white sugar with whole wheat flour & unrefined sugar when cooking & baking. I know it can sometimes affect the taste & texture a bit but to me the trade-off is well worth it with the extra fiber, vitamins & minerals. My favorite family cooking traditions
Even though late October signals the coming of winter, our family makes the most of it by having a special dinner every Halloween followed by a delicious pumpkin pie. From that day until right after Christmas, desserts & special meals are more frequent. We always have a big Thanksgiving & Christmas dinner, followed by pecan pie. Then, just after January 1, we begin the transition from couch potatoes to ardent exercisers for the next 10 months.
My cooking triumphs
I baked a New England Pot Roast with gravy for a small family gathering including my parents & grandparents & was so glad it turned out well.
My cooking tragedies
Once as a teenager I prepared a simple but filling dinner of lima beans & cornbread for my boyfriend & 2 other couples. Kind of nervous & in a hurry, I made the mistake of salting the beans before they were done & when I served them, they were literally hard as rocks. I will never forget one of the guys cried out: "Boy!! What's wrong with these beans??!" It's hilarious now, but at the time I wanted to just run out & hide. LOL

Honey Graham Crackers
This is the best Honey Graham recipe I've found. I made 2 changes: I used 1 tsp. cinnamon added to the dough itself (saved adding more sugar to the top). I've found that a little cinnamon added to whole wheat flour (when it's going to have sugar in it anyway) often helps take the "wild" taste out of it. I also used 100% whole wheat flour - no white. It was great, and even better the second day. A delicious, munchable, mellow graham cracker! Thank you, Rebecca!

No Beans About It - Chili
Our new favorite! Omitted the vinegar, added water in it's place - and instead of canned tomatoes, used 10 fresh, ripe, peeled & chopped tomatoes. Wow! Talk about delicious! The flavor was so good, we didn't even care that the texture wasn't exactly the same as canned. We didn't even wait to get out the stick blender to process it - we just ate it! I let it simmer on low about an hour in a cast iron deep fryer. I also added 1 T. brown sugar, 2 T. molasses (we like our chili a little sweet) and 1 T. homemade prepared mustard. The recipe is very versatile and forgiving and easily tailored to one's tastes. No more canned chili for this family! Thank you so much!

Scottish Shortbread II
I used 100% whole wheat flour and unrefined sugar and it was excellent. Thanks for a great recipe!
