Poor Man's Beer Batter Fish

Reviewed: Feb. 4, 2012
This was my first attempt at frying fish, and I thought it worked out well. I fried it in a deep fryer rather than in a pan so it wouldn't be as messy and I overcooked it a bit. Next time I'll pull it out of the fryer a bit earlier. Still, it was good and really easy. I did add a bit of Old Bay and hot sauce to the batter for seasoning, which pepped it up a bit.

Mahi Mahi Rockefeller

Yum! I'm not sure if I'll make it again because the flavor wasn't quite enough to be worth what felt like a major calorie splurge with all the cheese, but it was good.

Asian Ginger Dressing

Reviewed: Nov. 22, 2011
I am stingy with 5 star ratings, but this dressing deserves all 5 stars. I wanted to drink this stuff! I am pregnant and have been having ginger dressing cravings but going to the local Japanese restaurant means I have to tempt myself with sushi I'm not really supposed to eat. Now I can easily make my own at home. I followed the recipe exactly and it was very similar to the restaurant dressing I love. I'll be making this often from now on.

Slow Cooker Cranberry Pork

Reviewed: Nov. 14, 2011
My husband and I both enjoyed this pork recipe. I think I may have accidentally overcooked it a little because it had a bit of a smokey flavor, but overall I enjoyed the cranberry sauce and I was very happy with how tender the pork was. The best part was that it was very easy to make. All I had to do when I got home from work was heat up some veggies for a side dish and we had a complete meal.

Tangy Cranberry Bread

Reviewed: Nov. 9, 2011
This recipe worked perfectly in my bread machine set to the "sweet bread" option. My only complaint--and it's not really a complaint since I should have paid more attention to the title of this recipe--is that this really is a very tangy bread. If I do it again in the future I think I'd like to add some sugar.

Stuffed Pepper Soup IV

Reviewed: Nov. 3, 2011
This was very good. Mine ended up more like a stew or chili than a soup (perhaps I simmered it too long) but the flavor was very good. It tasted just like stuffed peppers but was easier to make. Easy fall/winter dinner!

Ginger Glazed Mahi Mahi

Reviewed: Nov. 2, 2011
This was everything I like about a recipe: it was easy, full of flavor, and all of the ingredients were already on hand in my pantry or fridge. I even had frozen mahi mahi already in my freezer, but that is the only ingredient that I don't consider a kitchen staple. I ate it with a side of edamame for a healthy dinner.

Filipino Beef Steak

Reviewed: Oct. 3, 2011
This was incredibly easy to make and for such a simple dish it was surprisingly flavorful. Served with a salad on the side it made for a quick meal that satisfied both me and my husband. Just don't forget that it needs to marinate for at least an hour before cooking! I made the marinade and got the marinated meat into the fridge and chopped up my onions. Then when it was time to cook all I had to do was throw everything into the two skillets and dinner was ready in five minutes. As written you'll end up with too little marinade. I made it with just one pound of meat but forgot to scale back the onions. It was still really tasty, but I'll adjust the meat-to-onion ratio a bit better next time.

Baked Rice (Ross Fil-Forn)

Reviewed: Oct. 2, 2011
This was pretty good, but nothing spectacular. I made it exactly as the recipe suggested and I liked that it was very easy to make (no chopping, time to do other things while it was simmering and in the oven). I like the basil and mint, which gave it an interesting flavor, although if I try this again I will probably add more spices since I felt like it could benefit from additional spice/heat. As others have commented, it was a little bland for me and my husband, although I can see it working perfectly for toddlers and young children.

Beef and Noodles in Crockpot

Reviewed: Sep. 26, 2011
This was an okay recipe, but I found the flavor kind of bland. As others suggested, I added a can of mushrooms. I wonder if the liquid from that diluted the flavor somewhat? Overall this needed a little something, salt or more seasonings or something. On the bright side, it was very easy to make!

Five Spice Turkey Cheeseburgers

Reviewed: May 27, 2011
I liked the flavor of this burger, especially with the addition of the grilled pineapple. They were easy to make and nice and moist. Next time I think I'll add a bit more soy sauce and ginger and use a it less five-spice powder, but that's just a personal preference. The burgers were tasty as is and my husband and I both enjoyed them.

Cheese Ball I

Reviewed: Feb. 21, 2011
This cheeseball was unlike any other cheeseball I've ever had in the past. I make a different one every Christmas and this one was one of the best! It does have a very strong parmesan flavor, so skip this one if that's not up your alley.

Ham and Fresh Basil Pinwheels

Reviewed: Feb. 21, 2011
I've been eating a variation of this for lunch most days for the past couple of weeks. I go through all of the steps but instead of rolling it into pinwheels to serve as appetizers I eat the whole thing as a wrap. I use low-fat cream cheese so that it's not so fattening. Also, since I'm not slicing it into pinwheels I skip the chilling step (I figure the chilling is just to keep it from falling apart when you are slicing it into rounds). I wouldn't usually think of sundried tomatoes as something to combine with ham, but I really enjoy the combination. And you can't go wrong with cream cheese!

Schweinshaxe

Reviewed: Feb. 21, 2011
I made this for Christmas dinner for my fiance, at his request. I was wary since I'd never done anything like this before, but it worked out pretty well. My one problem was that all of the liquid burned away before the meat was finished roasting, so watch it carefully and add more cooking liquid if needed. My fiance thought it tasted like what he had eaten in the Czech Republic (although our pork knuckles here are apparently much smaller). I have to say that I wasn't a fan of the pork knuckle itself, but if it's a type of protein you like and eat, then this is a good recipe for it.

Egg Salad I

Reviewed: Nov. 3, 2010
This is really, really good! It uses very little high fat mayo but is still extremely flavorful (and colorful, too!). I didn't add onions because I didn't have any on hand, but I imagine a bit of red onion would be a nice addition. I put this on a Thomas Bagel Thin and had a delicious, high-protein, low calorie lunch! Thanks for the recipe!

This was really good: easy to make, and a good mix of sweet and spicy. I didn't have bacon on hand when I made this, but I bet the bacon would have made it even better!
