Garlic and Tomato Tilapia

This recipe was really quick and super easy. I was trying to figure out a way to make a quick lunch using up the last of my tilapia filets and diced tomatoes and this is what came up in the recipe finder. I was out of sour cream and so I used parmesan cheese instead. I bet it would have been even better with the sour cream, but my modification was still pretty tasty. Low in fat, too!

Mediterranean Chicken

My fiance and I both really loved the taste of this recipe. He's not a fan of olives so he picked them out of his but still thought the wine-tomato sauce was really flavorful even without the olives (I happily ate all his olives!). My one complaint is that my chicken breasts had to cook in the sauce a long time to be fully cooked and in the process the sauce cooked off too much. Next time I think I'll use four cups of diced tomatoes instead of just three, and I'll use thinner chicken breasts. Also, I definitely recommend using canned tomatoes to get the extra juice. I think fresh tomatoes wouldn't have worked as well.

Argentine Corn Pie

I thought this pie had a really good flavor. Unfortunately, it didn't firm up in the oven. It was golden brown and I was afraid if I cooked it any longer I'd burn it, so I pulled it out and we just ate it kind of soupy the first night. The leftovers firmed up in the fridge, though, and it was a great lunch the next two days.

Currywurst

I see that the person who submitted this recipe said it wasn't her original recipe, but I have to say that I tried this anyway and loved it! We're big bratwurst fans but I was sick of just grilling them up and serving them on buns with sauerkraut. This will be a new go-to recipe when we want something different. My boyfriend deemed the sauce "fantastic" and said he could eat it forever. I don't know if I could eat it "forever", but it was REALLY good. I made a couple of minor modifications: only one cup of ketchup instead of two (two cups just seemed like it was going to be way too much) and only two tablespoons of curry since I was worried 3 tablespoons would make the curry flavor overpower all the other spices too much. The only reason this didn't get five stars is that it involved too many dishes for my taste: the skillet, the saucepan, a bowl, and another saucepan for making sauerkraut on the side. (You can see from my other reviews that I prefer dishes with minimal kitchen clean-up afterward!) I have no idea how authentic this is, but I think it was a great fall dish.

BBQ Feta and Hot Banana Pepper Turkey Burgers

I made these exactly as suggested: just banana peppers, feta cheese, and turkey. I was skeptical and worried that they might be too bland or that the patties might not stick together, but I was wrong on both counts. These were DELICIOUS and so, so easy. Ever since I made them my boyfriend has been asking when we're having turkey burgers again (and this from a guy who formerly would have said, "Turkey burgers?! That's too healthy! Gross!")

French Onion Tomato Soup

This was delicious! I loved the slightly lemon-y flavor that came through the tomato base. Just make sure you go into this recipe with the right idea: keep in mind that this is not at all like traditional French onion soup. It's definitely more "tomato soup with onions." It was easy to make and my boyfriend and I both loved it. I will be making this all winter!

Nutty Tuna Sandwiches

This tuna sandwich was great! I never thought about subbing Ranch dressing for mayo before and I really like the change. This cured my tuna sandwich boredom.

Tasty Lemonade

I thought this was really good. It's more sour than some other lemonades I've tried, but in my opinion that's a plus. My boyfriend wasn't a fan, though. I think the brownish color was a turn off to him. Oh well, next time I get to have the whole pitcher to myself!

Pizza On The Grill II

This turned out great, with some minor modifications. I added pepperoni. I also followed a tip from one of the other comments and rolled the crust out on a piece of foil and then used the foil to easily transfer it to the grill. I grilled it on medium instead of high, and it still look less time to cook than the original recipe suggests, so watch it closely! I can see how the uncooked dough might slip between a grill with big gaps in the grate, but it cooked fine on our grill. The big plus is that there were no dishes to wash other than the plates we ate from and the spatulas we used to flip the pizza (I served the pizza on the same cutting board I'd used to chop the ingredients). Looking forward to trying this again with different toppings!

Baked Tilapia

I would definitely make this again. My boyfriend and I both enjoyed it and it was simple to throw together. Like most everyone else, I tweaked this recipe a bit. To make it lighter I used only a quarter cup of olive oil in the sauce and used just a little bit to grease the baking pan rather than using the full amount called for in the recipe. I also used only a dab of butter on each filet instead of a whole tablespoon. Worked great!
