My Amish Friend's Caramel Corn

I give this five stars because of the ease of the recipe. I made two batches of homemade popcorn using 1/2 cup kernels each time and that made right about 7 quarts popped corn more or less. It was the perfect amount of popcorn for the amount of sugar mixture called for. I poured the mixture over the popcorn in a paper bag then stirred with a wooden spoon and shook. I poured the popcorn equally into three greased 13x9 pans and it cooked beautifully. The clean up was a breeze too! Still crunchy the day after! The next time I make this the only change I make will be to cut the vanilla in half or leave out all together, especially if omitting the peanuts! Fabulous recipe!

Fresh Strawberry Upside Down Cake

This cake was so good! I used whole frozen strawberries which I thawed, quartered some, mashed some, and added a bit of sugar to draw out the excess water. I poured off about a 1/2 cup of the liquid, stirred in the jello and used only about 1/2 the marshmallows because I didn't think it would all fit into my bundt pan. I greased the pan heavily and used a drip pan to catch the drips which inevitably happened with so full a pan. The baking time was longer since I used a bundt pan (about 1 hour and 10 minutes at 350°) so I placed a sheet of foil over the top towards the end of the baking time to prevent over-browning. Once turned over it went straight into the fridge to set. It turned out beautifully and held together just like a picture when served! FABULOUS!!!

Soy Sauce Substitute

During a time when I could not have regular soy sauce this recipe was a fantastic find! It allowed me to enjoy Asian flavored food without all the sodium, soy, and wheat. Thank you!

The Best Meatballs You'll Ever Have

My husband who does not like meatballs loved these. They were moist and wonderful. I sauteed on the stove then popped in the oven for 15 mins at 350° then topped with homemade spaghetti sauce and cooked for another 15 mins. Fabulous!

Spaghetti Squash Saute

Oh my goodness! This is so wonderful! You can't go wrong with butter, fresh garlic, and onion! It is the perfect companion to the sweet flavor of the squash. Both my husband and I loved this recipe. He is in awe that he can actually say that he likes squash now! It is great as the base for a lovely red sauce or meat sauce as well. Fantastic in every sense of the word! Thank you!

Crepes

Very good and simple crepe that can be filled with either sweet or savory meats and/or sauces. I used a whisk since I didn't have a blender on hand and they turned out just fine. I followed the recipe exactly as stated otherwise. I actually like them a tiny bit thinner so I'll be thinning them with a touch more milk next time. Wonderfully easy recipe!

Healthy Banana Cookies

For ease of recipe and use of no refined sugars or artificial sweeteners I give this recipe 5 stars! For overall taste as written 4 stars...not much flavor. But I do think that this is a very versatile recipe that has a tremendous amount of potential for adding ingredients per your liking. Definitely things like cinnamon, allspice, nutmeg, pieces of dried fruit, nuts/seeds, fresh chopped apples, pears, peanut butter, and even chocolate or carob would make this a very healthy and quite tasty treat. Both my kiddos kept asking for more! Thank you for a wonderfully healthy cookie recipe for my family!

Sweet Potato Slaw

Wow! This is such a unique slaw idea. I absolutely love it! The creamy sweetness of the dressing and the crunch of the potatoes and pecans are a wonderful combination. What really makes the slaw in my opinion, however, is the grated lemon peel. Definitely don't skip that ingredient! Everything about this recipe is perfect just as written, but because this is such a unique recipe it'll serve as a springboard for experimentation next time. In the future, I'll probably add more things like cranberries, raisins, peanuts and other savory tidbits. Thank you for a wonderful recipe!

Quick and Easy Alfredo Sauce

Very creamy and smooth! Wonderful that it is made with all the normal ingredients that I keep on hand. Surprisingly, it tastes only a little bit like cream cheese. Nice!

Microwave Popcorn

In efforts to try to save my smooth top stove from further scratching while popping popcorn I resorted to this recipe. I was pleasantly surprised at the outcome and even made the kettle-type popcorn as well using Bake4fun's review of this recipe from July of 09. Just be sure to take out the bag as soon as it starts to slow. My microwave took less than 2 minutes!

Frosty Orange Drink

This recipe is wonderfully easy and wonderfully good! It is a little on the sweet side, so I'll use less sugar next time, but great nonetheless. In order to make it taste a little more like a creamsicle I increased the vanilla. I absolutely love that it uses the orange breakfast drink/Tang type ingredient instead of regular orange juice or oj concentrate. Because of that it doesn't have that slightly bitter or acidic aftertaste that the other orange julius-type recipes have. Many thanks!

Venison Tenderloin Bites

A wonderful combination of flavors for a cut of meat that can't be messed up. I didn't serve over arugula, but served them as a kind of venison nuggets. Not crunchy, or soggy, just very tender. Very nice!

Simple Maple Syrup

This was a huge hit with my family and they are all quite snobby about their syrup! I used 1 cup brown sugar and 1 cup white sugar, 1 cup water, and 3/4 tsp of imatation maple flavoring. I believe the trick to getting the syrup a thicker consistency even when serving hot is to let it simmer and reduce until desired thickness. It does just wind up maple-flavored sugar water if you don't cook it down a bit. Lovely, and cost efficient. Thank you!

Chocolate Cornstarch Pudding

This is SO good. It is very smooth and creamy. I used half skim milk and half evaporated milk to make it a little more creamy. I also grated some dark chocolate candy squares into it to make it more chocolatey. The next time I make this I'll probably double the cocoa to get that nice rich chocolate flavor.

Pork Chops for the Slow Cooker

This recipe is easy and turns out deliciously tender pork chops. The flavor is reminiscient of BBQ, but not quite as sweet. I thickened the sauce with TB corn starch dissolved in a TB water and it coated the pork chops nicely. However, the next day was a better hit when I shredded the meat and added a sweet BBQ sauce and served on buns. Very versatile recipe.

Mini Pumpkin Muffins with Orange Drizzle

These make very moist and tall-rising mini-muffins. I too, took the advice of another reviewer and used a baggie to pipe batter into the muffin tins. They took no time at all to fill and rose beautifully over the tops. They are not too sweet so the orange drizzle goes perfectly with the spicyness of the muffin. Really nice and easy Fall treat! Thank you!

Easy Lemon Cookies

I really love how easy this recipe is! The cookies turn out light, fluffy, and beautiful. It looks like you've slaved away in the kitchen for hours, when it really couldn't be any quicker. I really like that it is great base recipe for other cake mix flavors. I've tried the confetti type cake mix and substituted 1/2 tsp vanilla and 1/2 tsp almond for the lemon extract with rave reviews. You can't go wrong with this recipe!

Daddy's Popcorn

Fantastic! This is how my Daddy made popcorn too! He never measured anything so occasionally the popcorn was a hit and miss! The measurements, pan size and timing were right on! Thank you for the detailed recipe information! I used vegetable oil and butter and it turned out beautifully. WAY better than the chemically stuff you get from a microwave bag!!
