Sweet Potato Slaw

Wow! This is such a unique slaw idea. I absolutely love it! The creamy sweetness of the dressing and the crunch of the potatoes and pecans are a wonderful combination. What really makes the slaw in my opinion, however, is the grated lemon peel. Definitely don't skip that ingredient! Everything about this recipe is perfect just as written, but because this is such a unique recipe it'll serve as a springboard for experimentation next time. In the future, I'll probably add more things like cranberries, raisins, peanuts and other savory tidbits. Thank you for a wonderful recipe!

Quick and Easy Alfredo Sauce

Very creamy and smooth! Wonderful that it is made with all the normal ingredients that I keep on hand. Surprisingly, it tastes only a little bit like cream cheese. Nice!

Microwave Popcorn

In efforts to try to save my smooth top stove from further scratching while popping popcorn I resorted to this recipe. I was pleasantly surprised at the outcome and even made the kettle-type popcorn as well using Bake4fun's review of this recipe from July of 09. Just be sure to take out the bag as soon as it starts to slow. My microwave took less than 2 minutes!

Frosty Orange Drink

This recipe is wonderfully easy and wonderfully good! It is a little on the sweet side, so I'll use less sugar next time, but great nonetheless. In order to make it taste a little more like a creamsicle I increased the vanilla. I absolutely love that it uses the orange breakfast drink/Tang type ingredient instead of regular orange juice or oj concentrate. Because of that it doesn't have that slightly bitter or acidic aftertaste that the other orange julius-type recipes have. Many thanks!

Venison Tenderloin Bites

A wonderful combination of flavors for a cut of meat that can't be messed up. I didn't serve over arugula, but served them as a kind of venison nuggets. Not crunchy, or soggy, just very tender. Very nice!

Simple Maple Syrup

This was a huge hit with my family and they are all quite snobby about their syrup! I used 1 cup brown sugar and 1 cup white sugar, 1 cup water, and 3/4 tsp of imatation maple flavoring. I believe the trick to getting the syrup a thicker consistency even when serving hot is to let it simmer and reduce until desired thickness. It does just wind up maple-flavored sugar water if you don't cook it down a bit. Lovely, and cost efficient. Thank you!

Holy cow!!! These beans are GOOD!! I've never been able to make beans before, but now...WOW!!! I won't make pinto beans any other way!!! I can't believe how easy they are and all without oil or fat! Thank you!!!

Chocolate Cornstarch Pudding

This is SO good. It is very smooth and creamy. I used half skim milk and half evaporated milk to make it a little more creamy. I also grated some dark chocolate candy squares into it to make it more chocolatey. The next time I make this I'll probably double the cocoa to get that nice rich chocolate flavor.

Pork Chops for the Slow Cooker

This recipe is easy and turns out deliciously tender pork chops. The flavor is reminiscient of BBQ, but not quite as sweet. I thickened the sauce with TB corn starch dissolved in a TB water and it coated the pork chops nicely. However, the next day was a better hit when I shredded the meat and added a sweet BBQ sauce and served on buns. Very versatile recipe.

Mini Pumpkin Muffins with Orange Drizzle

These make very moist and tall-rising mini-muffins. I too, took the advice of another reviewer and used a baggie to pipe batter into the muffin tins. They took no time at all to fill and rose beautifully over the tops. They are not too sweet so the orange drizzle goes perfectly with the spicyness of the muffin. Really nice and easy Fall treat! Thank you!

Easy Lemon Cookies

I really love how easy this recipe is! The cookies turn out light, fluffy, and beautiful. It looks like you've slaved away in the kitchen for hours, when it really couldn't be any quicker. I really like that it is great base recipe for other cake mix flavors. I've tried the confetti type cake mix and substituted 1/2 tsp vanilla and 1/2 tsp almond for the lemon extract with rave reviews. You can't go wrong with this recipe!

Daddy's Popcorn

Fantastic! This is how my Daddy made popcorn too! He never measured anything so occasionally the popcorn was a hit and miss! The measurements, pan size and timing were right on! Thank you for the detailed recipe information! I used vegetable oil and butter and it turned out beautifully. WAY better than the chemically stuff you get from a microwave bag!!

Flax and Sunflower Seed Bread

This was so very easy. It was not a lighty and fluffy type of bread. Right out of the bread maker it was dry like day-old bread. It did not crumble when cut and browned nicely. The taste was not overly sweet, but pleasantly sweet. I will probably try to tweek the baking time to see if I can adjust the dry texture because the flavor was good enough to warrant trying again!

Classy Green Bean Casserole

This is a really good and simple recipe. Great way to get both my kids to eat their green beans. They usually don't like them at all. I love that this doesn't require the french fried onions since I can never remember to buy them! I only used 1 can of green beans and a 1/3 cup of sour cream and a 1/2 can of soup. Fabulous! Definitely a keeper in my book!

Raspberry Cream Cheese Coffee Cake

The taste of this recipes is really phenomenal. All of the flavors accentuate one another perfectly and the almonds add the best crunch to the streusel topping. I did not have a 9-in springform pan so I used a glass 9x8x3 pan. Unfortunately, the middle of the cake was too doughy and the edges browned a little too fast. But the flavor...wow! A longer cooking time and foil over the edges should alleviate that in the future...or maybe a bigger pan. It makes a ton!

Black Bottom Cupcakes I

These cupcakes turned out SO moist! I added 1/4 cup mayo to the batter as another reviewer suggested and lessened the oil to 1/4 cup. They were eaten up in NO time at all! I personally thought that the cream cheese filling was a little lacking in flavor, but you can always tweak it to your liking. This is definitely a great base recipe to build upon.

Cake Mix Cinnamon Rolls

I thought for sure that these would be a no-fail cinnamon roll recipe since the base contained a cake mix. Boy was I wrong! These didn't turn out at all. I'm not sure exactly where I went wrong, but I'm still definitely still on the lookout for THE cinnamon roll recipe!

Soft Christmas Cookies

I've been using my spritz cookie recipe for the last several years because of the lack of a really good sugar cookies recipe. I am looking NO further. This is the absolute best soft sugar cookie recipe ever!! They remain soft and non-crumbly after baking, they are super easy to shape and cut-out, and they have a great flavor. They taste EXACTLY the same as the cookies that you buy at the local grocery store or Walmart bakery with the thick, hard icing and sprinkles. You can ice any way you like and you can't go wrong!

Resurrection Rolls

These are always good! Even my husband who does not like marshmallows will eat them. After making several times I've found that the best way to contain the marshmallow ooze is to cook them in greased muffin tins instead of a baking sheet. Blessings!

Burger or Hot Dog Buns

My husband LOVED these. This recipe is so quick and easy and almost impossible to mess up. This coming from a good turn out with two pretty major goof ups during preparation. LOL. With that said, I'll have to try them again (hopefully without the mistakes) and see just how fabulous they can become!
