Company Couscous

I followed the recipe as written and thought it was pretty bland. Couscous definitely needed to be cooked in chicken stock, but not sure if that would have fixed the problem.

California Chicken

This was very good. My husband couldn't stop raving about it. We used munster cheese instead of Monterey Jack. Also, like other posters, I thought this needed bacon. If I make this again, I'll definitely add some.

Scrumptious Beef and Potato Casserole

This was really good. I made a few changes to the recipe though. The meat and onions were browned in olive oil as opposed to the shortening. Some of the reviews stated that the original recipe was a little soupy, so I added some flour to the beef/onion mixture to thicken the sauce up some - this worked very well. I also added frozen veggies to the beef/onion mixture. I cut my potatoes up into small pieces and par-boiled them to reduce the baking time. And, I didn't have any wheat cereal or corn flakes so I crumbled Ritz crackers on top and it was SO good!

White Chocolate Raspberry Cheesecake

Loved this recipe. My family isn't big on white chocolate, so I substituted dark chocolate for the white and it was perfect. I used oreo cookies for the crust. Since the cookies are already sweet, I didn't add any of the sugar recommended for the crust. Also, instead of using the raspberry mixture recommended in the recipe, I melted down some Just Fruit raspberry jam, which worked fine and tasted great. Love this!

Pork Tenderloin with Dijon Marsala Sauce

This was fantastic. I made it for fathers day dinner last night and am still getting rave reviews on this meal. I served this with roasted new potatoes, steamed broccoli and some fresh bread (you'll want the bread so you can eat up all the great sauce this recipe makes). The sauce also tastes great on vegetables!
