Potato Pancakes I

This was a great recipe! I made it just as stated, and they were crispy, flavorful, and tasty with plain yogurt and apple sauce on top. Do be prepared for the cooking time though, as it was longer than i had anticipated. so good!

Lemon Garlic Tilapia

This was a flavorful and tasty way to fix the same old fish. I had trouble with mine drying out a bit, as the cooking time was longer than i needed. I used all ingredients as stated, and it turned out yummy.

Chewy Oatmeal Cookies I

These cookies were sooo good! Very moist and chewy with a lot of flavor. I added more spices (allspice, cinnamon, nutmeg, ginger) and some whole wheat flour. I made half the batch with just chocolate chips and sliced almonds, and then added shredded coconut and craisins to that for the second half. These are really great.

Applesauce-Oat Muffins

These turned out really well. I followed the recipe exactly, with the substitution of 1 cup whole wheat flour, and the rest AP,and a bit more cinnamon. When adding the topping it would be helpful to press it in to the batter a bit, as a lot of mine fell off while removing muffins from tin. These are tasty, but a touch plain. They are good as is, or would be the perfect base for any dried fruit (i like craisins), shredded coconut, fresh berries, more spices, or pineapple. Great recipe!

Thai Chicken Tenders

I made a few changes, thanks to other reviews, and in the end my whole picky family loved this dish! I made the sauce seperately, with all the listed ingredients, but only a 1/4 cup peanut butter, added some soy sauce, chicken broth, lime juice, garlic and tahini. I also added carrots, cabbage, peas and broccoli. First i browned the chicken, then added the veg and some stock to steam it. this made the chicken come out really tender too. When all was cooked i tossed it in the sauce and served over rice with chili flakes sprinkled on top.

Lemon Sorbet

This is the best lemon sorbet recipe i have come across, ever! The flavore is very lemony with a great balance of tartness and not-too-sweet. The carbonated water gives it a perfect consistency, not too icy, and very light. I think i might try it next time with some mint leaves minced up in it too. yummy!
