Mediterranean Salmon

OK...I love salmon and love balsamic vinegar so I thought this would be fabulous. It wasn't. For some reason, the flavors just didn't seem to work together. Not sure why. I can say, it was MUCH better the next day for lunch. I don't think I'll be making this one again.

Balsamic Chicken and Pasta

Great Recipe!!!! I followed it exactly except I quarted my tomatoes. I just like them smaller. I was really concerned about 2 ounces of fresh basil, but it was fabulous. I eaten it warm and cold and it is great both ways. The recipe says 6 servings but I divided it up into 12 servings. This recipe makes a lot!

Swiss Cheese Noodle Bake

YUMMY!!!! Of course, I made some changes. I only need half of this recipe so I halfed it. I only used ground beef and I left out the sausage. That way, I wouldn't have half a pound of sausage and ground beef left over. I also only used 8 oz of swiss cheese and I shredded it. I used whole wheat egg noodles and no one knew. It was so good. The whole family loved it. The only thing I would change would be the cooking instructions. I would cover it and cook for 30 min. and uncover it the last 5 min of cooking. My noodles got a little crunchy and dried out during the baking.

Beef with Green Onion

OMG! This was SO Yummy. I did make a couple of adjustments. I used White cooking wine instead of sherry because that is what I had on hand. I doubled the sauce and added broccoli. This was very easy and tastey. Don't leave out the oyster sauce. It just makes the recipe.

Strawberry JELL-O® Pie

This is a great, easy pie. For years, I've made one similar to this. (water instead of apple juice and sugar-free jello instead of regular jello)Either way, this is a delicious pie. This go around, I used a baked pastry crust instead of graham cracker crust because I happened to have one. Both pie crusts are great. Kids and hubby loved it. Don't forget the whipped cream.

Roxie's Bran Muffins

These are so good. Not your typical Bran muffin. I used plain flour because that is what I had on hand. I used a granny smith apple and chopped it instead of shreading it. I like the chunks. I also added some chopped pecans. I added extra bananas because my bananas were very small. This is a great tasting, moist recipe. One other thing, fill the muffin cups FULL. This recipe doesn't rise very much.

Pink Pie

Not sure what went wrong. My milk never truely whipped. It seemed too soft. Once I added the gelatin mixture, it just all becam runny and wouldn't fold together. I did stir it up to combine and refrigerated it. It became and EXTRA SOFT pie, not fully set yet not runny. The taste was fine...nothing to write home about though. I think I'll delete this one from my recipe box.

Awesome Chicken Noodle Soup

OMG!!! This is the best! It is time consuming but worth the effort...especially if you double the recipe and freeze a portion for later. I left out the lemongrass...not a big fan of it. Other than that, I followed the directions...except added COOKED egg noodles instead of raw egg noodles. I used the veggies from the stock to make a ham and bean soup with a leftover ham bone and a ripped up ham steak.
