Pumpkin Cake II
I only used 3/4 cup oil, and it was plenty. 2 tsps pumpkin pie spice, fresh pumpkin, and pecans instead of walnuts. It didn't taste like pumpkin at all more like moist pecan cake.

Whole Wheat Pumpkin-Applesauce Muffins
After reading some of the reviews, I used only 1/2 tsp salt, 2 1/2 tsp pumpkin spice, no white sugar, no oil and 1 cup pumpkin. I prepared it in a loaf pan and was ready in 43 min ( I used my toaster oven). It smelled and looked wonderful, but it was so tough! I was disappointed (to say the least). So I double wrapped it in plastic wrap and left it overnight. This morning I unwrapped it and tore of a chunk, it was so moist and delicious! Perfect pumpkin taste. I will bake many and give out in gift baskets.

Simple Scones
I prepared mine in the food processor, it was easy and quick. I did the orange cranberry variation. I did an egg wash, and on some I drizzled some icing that I prepared with powdered sugar and freshly squeezed orange juice. Fabulous, this one will replace my old recipe.
