Burger or Hot Dog Buns
These worked out better than I expected. I started the dough in the bread machine and removed it after an hour (from an hour and a half dough cycle) and then cut 12 roughly equal sized pieces and shaped them according to the directions for hot dog buns. I found it best not to flour the counter when patting them into roughly 6 x 4 rectangles before rolling, so that they stuck together better. I placed them on a prepared baking sheet and covered them with plastic wrap sprayed with cooking spray. They took another 1/2 hour to 45 minutes to double in size (and I had them sitting on top of a warm oven). The four stars is because, as other reviewers have mentioned, the time estimate is much shorter than it actually needs to be for proper rising of the buns. They baked up beautifully and were the perfect texture. I will definitely make again, and maybe brush with butter and onions for onion rolls. Yum!

Crispy Potato Wedges
So easy and so yummy. I only really followed this recipe for the oven temperature, as I made a few changes. I cut the potatoes into quarters and then sliced from there, so I got a large number of wedges out of each potato. I put my silicone baking sheets on two of my pans, placed the potatoes in one layer, brushed with olive oil, then sprinkled one pan with cajun seasonings and the other pan with salt and pepper. I baked for about 25 minutes, then flipped the potatoes, brushed on olive oil and sprinkled with the same seasonings and cooked another 20 minutes or so. Some of the thinner pieces were almost like potato chips as they got nice and crispy. Very good and so simple.

Tiramisu Layer Cake
The cake was moist and delicious! I followed advice of others and made two layers with the instant coffee. I increased the amount of coffee about 4x until the batter had the color and flavor I was aiming for. I also forgot to mix in part of the frosting with the mascarpone mixture, so the frosting between layers wasn't too thick, but was still complimented by others. I only had semisweet chocolate chips for the garnish, so I shaved them with a cheese grater, which didn't look as pretty as larger curls, but added some nice texture and flavor to the frosting. Will make again!
