Simple Peanut Squash
I used the cubed squash sold in a plastic box at Cosco. Couldn't imagine cubing a whole squash myself! I put the cubes in a small roaster and added a touch of cinnamon to the recipe. I cooked it 45 min & it came out browner than the picture, fully cooked and sitting in liquid that could have been thickened if desired. I also added a spot of low sugar apricot preserves to top it off on my plate. I love the simplicity & flavor of this recipe!

Orange Herb Roasted Chicken
This chicken turned out to be a mess for me! It almost seemed to be boiling in the broth; never did turn brown & crispy on the outside like I like it. Furtermore, the skin tore when I was putting the butter pieces in it so all ended up in the broth. I overcooked it at close to 2 hrs just trying to get it brown and done. The flavor was OK, but I'm so glad I didn't have any guests the night this was served!

Quick Quiche
Best recipe yet from your site! What a hit at the potluck! My changes to the recipe included: I used half Swiss and half English Coastal Chedder, sauted the onions & about 1/4 cup of a red pepper sliced in small ribbons--added cooked broccoli from the night before. I spread these ingredients in a layer over the bacon & cheese as someone said their ingredients migrated to the edges. I used no salt. Recipe cooked in exactly 35 minutes. I decorated top with a sprig of fresh basil. Thanks for an easy, versatile recipe that tastes delicious! Marcie Hines
