Best Ever Muffins

Reviewed: Sep. 26, 2009
i made this as a savory muffin. the texture was very nice, however, it was a little on the bland side for us. i used cheddar cheese and jalapenos. i cut back the sugar to 1/4 cup; not sure if that is what the problem was. i will use this recipe again though for some sweet ones, and perhaps try it again for the savory. thanks

Authentic and Easy Shrimp Curry

this was very good. easy to make and delicious with a side of indian spiced rice. followed the recipe with the exception of the tomatoes, i used plain tomato sauce because i detest chunks of tomatoes in my food. i will make this again for sure! thanks RK for the post!

Spanish Cod

Reviewed: Sep. 1, 2009
this was very good. i was looking for something different to do with the cod i bought other than frying it or baking it. the only substitute i had to do was the veggies. i didn't have marinated veggies, i used some fresh zucchini from the garden. thanks so much for the post Lundegaard1!

Salmon Cakes I

Reviewed: Aug. 22, 2009
I added a little old bay seasoning and used fresh cooked salmon. I also used leftover mashed potatoes instead of cooking them fresh here. A good basic recipe.

Savory Garlic Marinated Steaks

Reviewed: Jul. 19, 2009
This is a very good marinade. Instead of using the cayenne, I subbed 1/4 tsp of red pepper flakes. I also did not use the full 2 tsp of black pepper. I marinaded a 1 1/2 lb flank steak for about 6 hours, and boy it was tender and flavorful. I only used half of the marinade and have the other half in the refrig. for later. Thanks so much for the post Angie, I will use this again!

Fire Roasted Tomato and Feta Pasta with Shrimp

Reviewed: May 15, 2009
this was very good. nice light meal. loved the fresh basil and the fire roasted tomatoes with the creamy feta cheese. the rest of the family wasn't too crazy about it; so i guess it won't go into the rotation too often, but i liked it and that's all that mattered cause i'm the MOM! LOL

Asian Style Meatloaf

Reviewed: May 7, 2009
omg, did i love this!! the rest of my family ate it with no comment, actually my DD said she didn't like it. my DH asked where the gravy was even before he ate it...to me gravy is to cover up the flavor of stuff, and boy you do not want to cover up the flavor of this meatloaf....i will make this again, but as meatballs for a party or something. i used green onions and a garlic/ginger paste instead of just the ginger. i also took the suggestion of using 1/4 cup ketchup and 2 TB hosin for the glaze. if you like the taste of pot stickers, you will enjoy this meatloaf!

Cake Mixes from Scratch and Variations

Reviewed: Mar. 21, 2009
i used the yellow cake mix option to make mini pineapple upside down cakes. i took the suggestions to use oil instead of shortening and an additional 1/2 cup of milk. very easy, delicious and moist. i really have no reason to ever buy a cake mix in a box again. i hope to try the other variations listed here also. thanks so much for the post!

German Spaetzle Dumplings

Reviewed: Feb. 21, 2009
i followed the recipe to a T, and i think i did pretty good! i had no idea what the consistency of the dough was supposed to be like, but in retrospect, i did just fine. my nutmeg is old (need to replace) but for the first time making and tasting, these turned out just fine. a great first starter recipe.

Harvest Pork Stew

Reviewed: Feb. 10, 2009
this was very good. i didn't use the sage (didn't have any) and i used sweet potatoes instead of the squash. i am sure i used more than 1/4 tsp. of the rosemary. i put it into my loose tea holder. i used a granny smith apple, as other said the macintosh was too sweet. i think as a personal preference, the granny smith worked great. i also put in some parsnips. family wasn't overwhelmed with this, but i liked it. so majority rules i suppose. to bad, it was very good. def. worth the try for the rest of you!
