Lemon Chicken Piccata

This is an excellent recipe. I've had the 'real' piccata in Italy and this is every bit as good. Make sure to pound the chicken breast meat thin and don't over cook... it cooks quickly! Also, I added a few slight fork fulls of flour to the lemon juice and blended well to make a slightly thicker sauce and it turned out just right. If you don't have the Italian parsley, don't sweat it... I don't think it gave it much flavor and and almost ruined the look of the sauce with too much green! 5 stars though!

California Chicken

Good dish, very clean tasting, surprising good flavors. I marinated in eeoo, lime juice and garlic salt and browned the chicken filets in the marinade... would be better to put cooked bacon on the chicken before cheese to add super flavor... that would make this a 5 star.

Chicken Salad with Bacon, Lettuce and Tomato

VERY GOOD! Made the recipe exactly as listed, however, in addition I topped with chopped wasabi/soy almonds from Blue Diamond. Excellent addition!
