Russian Mushroom and Potato Soup
LOVE this soup! I used an onion instead of the leeks as I didn't have any on hand. I also use milk instead of the half and half and it still came out delicious and creamy! The dill flavour is great, don't skimp out on it! It's super filling and easy to make too!

Pumpkin Chocolate Chip Muffins
The recipe as it is was a little bland. I took some of the advice from other reviewers and made a few substitutions. I used whole wheat flour, brown sugar and a whole cup of pumpkin. I almost doubled the amount of spices. I didn't have any cloves so I added some pumpkin pie spice instead. I also added about a tsp of vanilla extract. They turned out fantastic! They don't taste alot like pumpkin but I love how spicy and chocolatey they are. I've made these 3 times now and they always get devoured way too quickly lol =)

Eggless Peanut Butter Cookies
Like many others, I was out of eggs and craving peanut butter cookies so I decided to give this a try. I used margarine instead of the shortening and 1% milk instead of buttermilk. No matter what I did, these cookies came out flat and hard. I tried lowering the temperature and reducing baking time between batches but still didn't get that chewy texture I was looking for. My boyfriend likes crispier cookies so he enjoyed them. Next time I'll try them with the shortening & buttermilk and hope for a better result!
