Orange Knots

I wanted to be lazy, so I attempted to do this in my bread maker on the dough setting. I watched it mix, and added flour as needed. I added just under 5 c. As I suspected, there is just too much to fit in the bread maker to rise, so I had to pull it out a little early. I made it into a loaf, again, just to be rebellious. It was beautiful. I didn't love the glaze; it wasn't quite orange-y enough for me. I will definitely bake again, but will change the glaze for next time.

Chocolate Zucchini Cake III

I make a couple substitutions: I substitute half of the oil with applesauce, and I put chocolate chips in place of walnuts. I also omit the cinnamon. I've made this several times now, and people just RAVE about it. It's a definite favorite, and I can *almost* convince myself it's healthy.

Blackberry Cobbler II

I added a little cinnamon to the fruit and the topping, and thought it added a nice touch. My husband thought it was a little too sweet, but the rest of us loved it as is. Also, I cooked the fruit in a saucepan and then poured it into a 9x9 baking dish, and it worked out perfectly.

Todd's Famous Blueberry Pancakes

I'll admit that I didn't wait at all before cooking- I had 5 hungry kids wanting to eat NOW! I made fairly small pancakes, but only got 9. I didn't think they were quite sweet enough, and I could really taste the baking powder. They're nagging me to make more, so I think I'll increase the sugar to a tablespoon and see if that helps.

Baked Spaghetti Squash Lasagna Style

I will admit I was a little nervous about trying this, but only tried because I was given a spaghetti squash, and didn't know what to do with it. It was a huge hit, and my husband is wanting to buy a spaghetti squash every week.

Nauvoo Gingerbread Cookies

These were perfect! Nice flavor, and very soft and chewy. If you wanted to use the recipe for a gingerbread house, or decorating the tree with the men, you'd want to cook the cookies a little longer to get them crisper.

Hearty Split Pea Soup

Like other users, I skipped the milk, and I used a package of bacon, chopped for the ham. I tried to not stir it, but after about 4 hours, it was almost physical painful to see it just sitting there, unstirred, so i gave in and stirred. It was a huge hit with my family, and everyone enjoyed it, including the two year old.

Garlic Red Potatoes

I used the same ingredients, however I cooked the potatoes at 450 for about 35 minutes. I sprinkled the Parmesan cheese on the potatoes at that point, then put them under the broiler until the cheese was bubbly (maybe 5 minutes?). These were very good and I'll make them again.

Creamy Peanut Butter Fudge

I made the recipe as stated, but added melted milk chocolate on top of the finished product. This stuff was absolutely fantastic and has become an instant family classic. I've had to make a couple batches to keep up with demand. It's so good that I can't decide whether to thank you or curse you.

Bittersweet Chocolate Pound Cake

We really love this recipe. I make a couple changes- Instead of using an unsweetened chocolate bar, I use the cocoa powder/shortening substitution that appears on the cocoa box. I also skipped the coffee altogether. It's a very dense, moist cake that gets rave reviews.

Monkey Bread II

We LOVED this recipe. I didn't put the raisins in, but otherwise followed the recipe to the letter. I had leftover sauce, so I just poured it on top before baking it. I also took the advice to drop a few globs of dough into the mixture, then fish them out with a slotted spoon. Worked out very well. It disappeared quickly and was a huge hit!

The amount of water in this recipe is merely a suggestion. You need to add until it feels right. I had to add more to my batch. I thought this recipe was wonderful and plan to make it frequently. Thanks!

Churros

These tasted pretty good, and were fairly easy to make. My only problem was I used the Pampered Chef cookie press. I've discovered it was not meant for churros! They were too fat and not long enough. I would definitely make this again, but I think I'd go with something else to squirt the dough into the oil.
