After reading many of the reviews, I substituted apple sauce for the oil, used a mixture of brown and white sugar, and used 3 eggs and 1 egg white. I also added raisins for texture and did not add any water when mixing. The bread came out moist, dense, and wonderful. In the future I'll cut back on the sugar by 1/2 cup to offset the sweetness of the applesauce. However, even a little sweeter than normal this bread has been a huge hit in my house!
