Raspberry Almond Coffeecake
This was a great recipe. I used other suggestions and used almond extract instead of vanilla, made 1 1/2 X the amount of batter. My batter was pretty thick and wouldn't pour so it turned out more like an apple betty texture but it was great. I made mine in a springform pan and it made an excellent presentation. Will try again with other berries and use a cream cheese/powdered sugar glaze on it. Yummy.

Authentic Thousand Island Dressing
This was an excellent recipe. I used all ingredients except cloves and added a bit of horseradish sauce to tang it up. I agree with some of the other reviews that it gets better when you let it set for a couple of hours. Used this over a Mahi tuna salad. Scrumptous.

Baked Pesto Chicken
I found this recipe very easy and pretty darn good but using the leftovers was the best. For lunch the next day I sliced the chicken and reheated for sandwiches on a crusty roll adding a bit more pesto and cheese. They were exellent. I also used large breasts and pounded them flat.
