I added an extra cup of zucchini for a total of 3 cups and I substituted brown sugar for 1 c of the white and decided to only add about 1 3/4 c total of sugar after reading some other reviews of it not needing so much sugar. I also used 1 1/2 c of whole wheat flour and 1 1/2 c of white. It's delicious, but I think next time I'll use the recommended amount of sugar and not skimp. I like my zucchini bread sweet, I guess.
