Grandmother's Buttermilk Cornbread
Like everyone else, I've tried tons of recipes and this has to be the BEST! I have a sweet tooth, so this was the first time I've found a recipe that was sweet AND moist. I served it with my homemade chicken chowder soup. It was great for soaking up the broth! I did have to use up some plain yogart I had in the fridge & it worked great! Every oven and baking dish is different, so I check all my baked recipes 5-10 minutes before the recommended time.

Creamy Twice-Baked Potatoes
Very yummy & creamy! Perfect. Because I baked potatoes in foil, I just had to be careful when scooping out the insides. They turned out fine. I would like to try it again with chives & green onions for added flavor.

Chicken Enchiladas I
Very tasty! I did not read the comments before I started cooking, so I made the dish according to the recipe. The mixture was way too running, so I reduced the heat and cooked it until it became a thick sauce. It worked perfect & everyone loved it. I'm going to try it in the future with the enchilada sauce to compare the difference in taste.
