Taco Pie
I made this over the weekend, but with a few variations. I used ground turkey instead of ground beef. I also used a can of hot rotel (drained) and a can of ranch style beans (drained of excess sauce). It turned out delicious and because of the rotel, pretty spicy, but thats the way we like it. The next time I won't add the sour cream before baking, I'll just wait and add it as a topper. I will probably also use a bit more cheese because we like things cheesy. This is an easy recipe and makes a nice meal that is great on a cold day!
