Nacho Chicken Casserole
I thought this turned out pretty well. I did make a few changes however. I used 2 5 oz chicken breasts, so a bit more chicken than the recipe called for. I also used 1 can of hot Rotel tomatoes in place of the green chilis and jalepenos just because of taste preference. I also used more cheese, and still thought it could be cheesier. I think the next time I make this I will not cube the chicken, but rather just keep the breasts whole and placed into the casserole, and then serve with mexican rice and refried beans. Another thought that I see here is to serve it wrapped in tortillas, or over tortilla chips like nachos which I may also try. It was a good, easy recipe with lots of variations that can be done.

Easy Scalloped Potatoes
I like this dish once it was done, but I will alter it from now on. The main thing is to boil the potatoes first because it took forever for them to cook thoroughly. I'm in a high altitude area, so expect that, but it literally took 2 hours and because I wasn't expecting it to take quite that long we ended up eating our steak with no side dish! Also, I will use the suggestion to use a larger casserole dish to spread it out, rather than a deeper dish. I think I will also use a bit more cheese, as it wasn't as cheesy as I like my scalloped potatoes.

No-Fuss Pumpkin Cake
I made this cake over the weekend and thought it turned out good. I have been reading some of the other reviews and I think I will try to change it up a bit the next time I make it just for fun. It is a moist cake, and not overly sweet which is nice. I did have to cook a bit longer because I'm in a high altitude area, but it was delicious!
