I burned these a little bit, but I imagine they'd be great if I hadn't (start checking on them at about 15 minutes so the same doesn't happen to you). I added a full tsp of cinnamon to the batter mix as well as the topping. The topping was a bit loose, so I'd recommend pushing it into the batter a bit when you add it so that it doesn't fall all over the place when you're taking out the muffins. Don't use muffin papers, they'll stick like crazy.

These are THE BEST pancakes I've ever made. They rise a ton, so are gorgeously fluffy, and melt in your mouth. I even adjusted them to be vegan (1 tbsp corn starch+2 tbsp applesauce per egg, and milk substitute), and they still turned out amazing.

Pretty good, very easy. I agree that the dough is a too sticky if you add all the milk (I ended up just ripping off sections to bake as the dough was too sticky to roll out well). These are very quick though, and fairly light.
