Garbanzo Bean Burgers
These were respectable. I would definitely add something for a binder. They fell apart really easily. We put these in pita, with a raita sauce, spinach, tomatos, banana peppers, klamata olives and feta. Super yummy. They turned out a little spicy for my kids, so next time I'll forgo the chilis.

Spaghetti Squash I
This was awesome. My house gets super hot in the summer with the oven on, but you can cook the squash in the microwave. I cut and seed it, slice it in half and put it in about a half inch of water, cut side down for 20 minutes on high. Then I added all my favorite veggies.

Vegan Bean Taco Filling
I made this into enchiladas. My family is big on Mexican food and I am always looking for healthier ways to prepare our favorites. I just rolled the mixture into tortillas, covered with a bit of cheese, leftover salsa and some olives. My family was shocked when I told them there wasn't any meat, and even more shocked when they saw the nutritional values lying on my kitchen table. Amazing dish. P.S. I skipped on the cayenne for the kids.
