Creamy Pesto Shrimp
I was not impressed by this recipe, but I must say I did try to lighten it up a bit as others suggested, and maybe that is why I didn't think it was that great. I used half and half instead of heavy cream and the dry pesto mix. My husband and I agreed that it was OK, but bland. I would recommend following the directions a little more closely and maybe you will have better luck with this one than I did.

Zucchini-Chocolate Chip Muffins
I've been making these muffins for 2 summers with the abundance of zuchinni from my garden and they are a favorite on mine. I always double the recipe and use 1/2 cup of oil and a 1/2 cup of applesauce to cut down on the fat. I recommend 1/2 cup of chocolate chips instead of 1/4. I also substituted blueberries when I didn't have chocolate chips of hand and it turned out great and was a tasty vatiation. This is definitely a keeper recipe!

Farmer's Market Vegetarian Quesadillas
Tried this tonight to use up the abundance of veggies from my garden....it was very yummy! I used regular onion instead of red, left out the green pepper and canned mushrooms insted of fresh. I reccomend using a quesadilla maker if you have one. (they make perfect quesadillas and only cost about $20, well worth it). I will definitely make this recipe again!
