In-a-Pinch Ketchup

Reviewed: Apr. 4, 2012
This has got to be the BEST ketchup I've ever tasted! I wanted an easy and quick homemade ketchup to go with meatloaf and this more than fit the bill. I cut the brown sugar to 4 T and used about a teaspoon of corn syrup. I can't wait to try it on a burger or hot dog. HIGHLY recommend this awesome recipe.

Carrot Zucchini Bread

Great bread! I added a tsp. of cloves and a tsp. of vanilla. This does not have alot of sugar which makes it great for those on low sugar diets. Will make a great breakfast bread. Shared a loaf with friends and they raved. Thank you!

Quick Savory Cranberry Glazed Pork Loin Roast

Reviewed: Oct. 22, 2009
What a wonderful recipe! I made this just as recipe says and it was a hit with my husband and our son (12), daughter (6). The marinade/sauce is fabulous. Whole cranberry sauce makes it very special. I had some sauce left over which I kept warm and served on the side which was great. Such an elegant meat that is so easily prepared. Thanks for sharing such a fantastic recipe, it is being added to our favorites for sure.

Aw-some Cole Slaw

Reviewed: Oct. 13, 2009
Wow! Wonderful cole slaw! I used the bagged coleslaw mix (so easy) and added about a teaspoon of celery seed. This is THE BEST and my very 1st from scratch cole slaw. Received gr8 reviews from my family and the family I sent some to along with a meal I made for them. This is the recipe I will use from now on since I'm going to make my own all the time now. Thanks for such a fantastic recipe!

Slow Cooker Lemon Garlic Chicken II

Reviewed: Aug. 13, 2008
Followed suggestions of doubling liquid. Great idea as this sauce is wow! Also cooked on low, this helps keep the chicken moist. Another tip for slow cooking is not to open the cover too much during cooking as the steam, moisture inside will come out. This is what cooks and keeps meats moist in a slow cooker. This is not a dish that adapts well to all-day cooking but I think it is a great last minute idea (3-4 hours on LOW is perfect). Thanks!

Peanut Butter Bars I

Reviewed: Jul. 25, 2008
GREAT! My kids (11 & 5) made these and had so much fun. EASY! I didn't have enough peanut butter for the 4 T in the frosting but we didn't notice. I want to try them with chunky peanut butter and extra chocolate on top next time. What an awesome treat for Christmas friend giving gifts.

Honey Cornbread

Reviewed: May 21, 2008
Awesome cornbread! Made no changes and it baked up wonderful. Next day was even better, warmed with more honey and what a treat. Our 2 kids loved it and only wanted that for supper. As far as the crumbly comments I think they over mixed or something. To me cornbread should be a little crumbly. Have added this to my Family Favorites recipe folder and will be sharing it with my friends as well. TRUE KEEPER!

White Cheese Chicken Lasagna

Reviewed: Feb. 14, 2008
Wow! This is fantastic! My kids (11 & 4) gobbled it up and my husband raved. I used rotisserie chicken which has so much flavor and is very convenient. using a great quality, flavorful stock makes a big difference. There is one thing I will change when I make it again and the reason I gave it 4 instead of 5 stars. I will add an egg to the ricotta as it was dry. I used fresh baby spinach (not cooked) and it was great (easier too). This is a keeper!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jan. 9, 2006
Excellent! I did add about 1 tsp. or so more cumin. I also boiled down my own chicken and used that chicken and stock which adds great depth of flavor. Using store bought tortilla chips is great too. Sour cream, shredded jack cheese and avacado are great accompaniments. My husband who has been sick with a cold LOVED it and found it very soothing. This is a keeper!

Pork Tenderloin alla Napoli

Reviewed: Mar. 2, 2005
This has become a favorite in our home. I have made it several times, as requested and it keeps getting rave reviews. This is so simple and elegant at the same time. It would make a great main course for a special dinner, etc. and everyone would think you were a gourmet cook. I do have fresh rosemary and have cut back a little on the amount as it can be overpowering and some people aren't big fans of that taste. I also add more of the olives as we love them. This is a must-try.
