Spinach Enchiladas Verde
Super easy and tasty. I gave up trying to roll the tortillas after awhile and just layered them. If I made it again I would add black beans, rice, and mushrooms and eat it with a Lactaid chaser.

25-Minute Tunisian Vegetable Couscous
My complaint with this recipe was the cardamom and paprika seemed WAY too overwhelming. My husband and I weren't able to eat more than half our plates before getting sick of the flavor. I think it needed some tomatoes too.

Zucchini Bread VI
This bread was easy to make and almost perfect- the fatal flaw was that it was a little too lemon-y for my tastes. If I made it again I'd half the amount of lemon extract.
