About this Cook
Carrying on my Mom's tradition. Everyone sits down at dinner and talks about their day. We don't eat until we are all together. Mom to 3 ages 13, 14 & 15, married 17 years. Cooking is what I do and what I LOVE to do.
My favorite things to cook
Mexican, Italian, BBQ, lots of baking, enjoy canning and always have homemade salsa in the fridge.
My favorite family cooking traditions
I enjoy having my kids in the kitchen. They have been baking Christmas cookies with me since they were small. Each one has their own specialty.
My cooking triumphs
Mastering my beloved Mom's macaroni salad from memory. My mom's been gone 2 years and my dad LOVES when I surprise him with a batch. Just the smell brings back so many summertime memories.
My cooking tragedies
too many to list. Maybe the missing acrylic nail in the 1990,s that showed up in a jello fruit salad I was serving at a potluck.

Easy Blender Salsa
family loved it. Took advice from others and added two crushed cloves of garlic and one tbl lemon juice with the lime. Easiest salsa ever!!!

Fiery Pork Skewers
Wow! the whole family loved this recipe. Like others I made 3x's as much marinade. When I skewered them I alternated (cut up) red/yellow/green bell peppers, red/white/yellow onions and I microwaved two russet potates till almost cooked through cut up and rotated them onto the skewers too. Husband used extra marinade to baste the whole skewer during grilling. So yummy..the family gave it 5 stars.

Layered Chicken and Black Bean Enchilada Casserole
Family loved this. I used jalapeno flour tortillas and pinto beans otherwise followed the recipe. Very yummy and flavorful. Also doubled recipe and layered 3 times so increased bake time.
