There are only three of us in the house and I had to double this which was a little odd. Love it love it love it!!

I also mixed romain and iceburg lettuce and substituted toasted almonds for the walnuts. Everyone loved this salad. Next time I will add chicken or perhaps some mandarin orange segments. The only suggestion I would make is to mix the dressing in as desired, the amount needed would be based on the amount of lettuce used anyway.
