Jumbo Fluffy Walnut Apple Muffins

Yum...my three year old girls loved helping me make these, especially sprinkling the topping. I substituted raisins for the walnuts and brown sugar for the white in the crumb topping. I also shredded the apples instead of slicing them, which I think is much easier to work with. I baked them in regular muffin pan and I had 12 full muffins. I could have probably made 14 or so regular muffins from this recipe. These are definitely a keeper.

Southern Dill Potato Salad

I have been trying and trying to make a good potato salad and finally I have a recipe that has helped me do that. I did make a few changes based on my taste...I left out the celery salt and onion. I used yellow mustard instead of dijon and used celery seed instead of real celery, both of these substitutions were because I didn't have the actual called-for ingredients on hand. I was so happy with the way this turned out..by far the best potato salad I have ever made.

Hamburger Rice Soup

I gave this four stars because had I not followed suggestions of other reviewers I don't think it would have turned out as well. I added 3 beef bouillan cubes, a small can of tomato paste, a can of green beans(drained), parsley, garlic powder, and minced onion because I didn't have any onion on hand. I also substituted one can of stewed tomotoes for one can of the diced and added almost a cup of rice. This was really good with the changes and even better the next day.

Banana Chip Muffins II

I thought this was very good...I modified it based on our tastes...whole wheat flour instead of all purpose, pumpkin spice instead of cinnamon, and brown sugar instead of white, and whole eggs instead of just the egg whites. They were a little bit browner than I would have liked at 15 minutes, so next time I will cut back on the time a bit.

Banana-Chip Oat Muffins

This is a great recipe to let the kids help you make. My three-year old mashed the bananas and mixed all the wet ingredients and I mixed the rest together. I used the left over instant oatmeal packages that I had in my cupboard for the quick-cooking oatmeal (one of those being cinnamon and spice for some added flavor). I cut down on the amount of chocolate chips just because I didn't have that many on hand. This made enough that I had to fill each cup all the way full..so I suppose I could have made more than 12.

Salsa II

This is fantastic! I followed the advice of other reviewers and used 1/2 lb of jalapenos with the seeds from three, used fresh yellow and red tomatoes from my garden, cut back on the cayenne and salt just a bit, and used lime juice instead of lemon. This has a fantastic flavor, I canned most of it...hopefully it won't kill me :)

Apple Carrot Muffins

Wow, this were great and my kids loved them. I actually was too lazy to grate the carrots, so I left those out. I left out the buttermilk entirely and the muffins turned out fantastic with no milk at all. Perfectly moist because of the moisture in the apples I assume. This is definitely a keeper.

Pumpkin Bars I

Yummy!! Split this recipe in half and substituted cinnamon applesauce for the oil and added 1/2 tsp of pumpkin pie spice instead of the cinnamon...yum, yum!! Used the Cream Cheese Frosting II from this site to ice. Delicious.

Awesome and Easy Creamy Corn Casserole

I made this and it was great! I made it with a cup of self-rising corn meal, 3 T of sugar instead of the muffin mix. The kids loved it. It did take an hour to cook though, but definitely worth the time.

Banana Crumb Muffins

I have made these twice, the first time with all-purpose flour, the second with whole wheat flour. Both turned out fabulous. If you have toddlers, like me, let them sprinkle the topping on!! These are great!

Baked Chicken Nuggets

Really great! Instead of dipping it in butter, I dipped it in a mixture of 2 eggs and a little milk. I did as another suggested and turned it on broil for a few minutes to really crisp it up.

Campbell's® Spicy Salsa Mac 'n' Beef

I did not have salsa on hand, so I used about two tablespoons of taco sauce just to give it some more flavor. I also added some cheddar cheese and mixed in some peas at the end. Good, quick, one-dish meal.

Brooklyn Girl's Penne Arrabiata

I felt like I was eating a dish right out of the Olive Garden (my favorite restaurant). I did add a few shakes of Italian Seasoning, oregano, and basil and even a bay leaf until it tasted the way I like it. I will definitely use this recipe again and I think I will bread the chicken in italian bread crumbs next time.

Old Settlers' Baked Beans

Yummy!! I was looking for something quick to fix for dinner and this was a complete meal. I did make a few changes because I didn't have all the ingredients on hand. Instead of barbeque sauce I added more brown sugar, ketchup, mustard and added some redwine vinegar, and 1/2 tsp liquid smoke. I also added a can of drained niblet corn and instead of kidney beans I added chili beans. I also left out the white sugar. I thought it was a terrific variation to everyday baked beans.

Ooey-Gooey Cinnamon Buns

Wow, this was great. The changes I made was to replace 1/2 c of the flour with wheat flour and also replace another 1/2 c with wheat germ just to make it a bit more healthy. I only used 1/2 c of butter in the dough mixture. I also spread softened butter onto the dough before rolling it up instead of melted butter. I only let it rise for 30 minutes on the second rising and then baked. Terrific!!

Applesauce Oat Muffins

As others, I increased the recipe for 12. Instead of using all the recommended flour, I used 1/4 c wheat germ, 1/4 c whole wheat flour, and 1 c all-purpose flour. Instead of using the canola oil, I used 5 T flax seed. I also increased the cinnamon to 1 1/2 t. and added 1 t vanilla and threw in some raisins. I only used 3 t of baking powder and 1 t of baking soda and omitted the salt. These were fantastic!

Bubble Pizza

I sprinkled the biscuits with Italian Seasoning and Parmesan Cheese before putting the mixture on. This is the second time I've made it and it was way better with the seasoning and parmesan sprinkled on the biscuits.
