Mexican Casserole
We LOVED it! I added some onion, garlic, and a red and a green pepper before the chicken. We also skipped the "casserole" part, instead just serving it more like a nacho chip appetizer... tossed some chips on the plate, ladled the mixture over it, and sprinkled with the cheese. SO yummy!
