Denise's Peanut Chicken

Fabulous. Do add peanut butter to the sauce, it makes it even better over white rice. This is such a flexible recipe, so feel free to subtract and add what you like/dislike.

Moroccan-Style Stuffed Acorn Squash

Probably one of my favorite recipes ever. Be aware that it does make more filling that you can stuff, so either cut it in half or make more acorn squash. I doubled most of the veggies and cut down on the couscous. Incredible, and a very easy way to impress a dinner party.

Fried Cabbage II

I know this isn't the healthiest thing out there... but it is fantastic. Seriously. Cook some chicken sausage on the side (preferably spicy) and dig in! Great in the winter!

Spaghetti Squash I

if you haven't made this yet, make it! More flavor and texture than pasta, and so much better for you. Go crazy adding veggies in, it makes it even more of a meal on it's own.

African Peanut Soup

I loved this! My husband not as much, but he isn't as much of a soup lover as I am. I doubled the onion, tripled the tomatoes, added spinach (great addition), and added the brown rice in as I served it to make sure the grains don't absorb all the water! Fantastic, and I've already made this 4 times now.

Cabbage Fat-Burning Soup

It was good. I do suggest using spicy v8 to give a little more kick, and alot more veggies. That said... you might want to use two stockpots, or half the recipe... it makes an insane amount of soup. Even if you aren't using this as a weight loss method (I wasn't), it is a great winter soup... especially if you add more veggies & potatoes!

Balsamic-Glazed Salmon Fillets

It was okay... a little lacking in depth. The balsamic overwhelmed the fish. If I did this recipe again, I would definitely cut the sauce in half. I like to taste my fish, not drown it.

Brown Sugar Meatloaf

Fantastic! I've made this a couple times now and just have a few changes: half turkey, half beef (less fat/more flavor), the brown sugar and ketchup mixture HAS to go on top to be any good, double the sauce (it's incredible), I used one large onion chopped very finely. IF you haven't made this yet... make it tonite. And add extra garlic too.

Spinach Tomato Tortellini

This was a fast, tasty, and cheap meal. The only thing that makes this recipe better is fresh ingredients... and maybe something to balance out the sweetness of the tomatoes in cream. I changed: all fresh ingredients except the tortellini, 3x spinach (cut chiffonade), 3x garlic, added a half onion (finely diced and sauteed). Overall, good dish. I still think it's missing one last thing... find it and this would be 5 stars. ***edit: I was looking through the reviews, and someone suggested pesto to freshen up the dish... I think it would work!
