I wasn't crazy about this recipe but my husband like it. I don't think it had much of a flavor. I'll give it one more try and see if it's any better.

I made this with my own home grown rhubarb. It was a big hit.I made it just the way it was written. Loved it. Had friends for dinner and they couldn't stop raving about it. They asked for the recipe. They couldn't beleive how simple it was to make. I will use the recipe all the time. Thanks Carol.

I made this cake for my husbands birthday. He loves carrot cake and this recipe was up there at the top. I had a different carrot cake recipe that I really like but I couldn't find it and this recipe is a nice substitute. I'll make it again. Very moist. Only changed the oil to 3/4s of a cup and left out the raisins, hubby doesn't like them. He doesn't like coconut either but I don't think he even noticed it. Good Good Good
