Egg-White Crepes
So simple, but so GOOD! I sauteed peaches with some sugar to put inside. It was delicious!

Lasagna Alfredo Roll Ups
I used jumbo pasta shells instead of lasagna noodles (easier and thats all i had!) and it was great! next time though i want to add chicken into it and make my own alfredo sauce.

Spinach and Cheese Stuffed Pasta Shells
I made mine earlier in the day (while my 9 month old was asleep!) Then put it in the oven at dinner time. Was very simple but super delicious. My hubby loved it and assumed I was in the kitchen all day making it!! Hehe! I did substitute cottage cheese for the ricotta cheese. And left out the fennel seed.
