Excellent way to prepare venison. Normally venison is too gamey for my liking but the apple worked perfectly to mask the gameyness. Meat turned out extremely tender and the sauce went well with mashed potatoes. I added a bit more apple and rubbed the meat with salt, pepper and rosemary prior to cooking. Next time I plan on adding a bit of maple syrup or apple juice to the roast for a little extra flavor.
