Apple Cake IV
This was an easy, delicious, moist, and somewhat healthy "cake," though I did make some adjustments per other reviewers and my own tastes. I cut the recipe in half and used an 8x8 pan. I used 2 apples, white whole wheat flour instead of all-purpose, 1.5 tsp cinnamon, 2/3 cup sugar, 1/3 cup vegetable oil, and no nuts. If you eat this for breakfast, as we did, you can cut the sugar even more to 1/2 cup and I'm sure it will still taste great.

Zippy Chicken Corn Chowder
My husband and I both loved this chowder! Total comfort food and very easy to make. My husband doesn't like red pepper so I used 1/2 a carrot instead. I also tripled the potatoes because I needed to use some up, but I cut them into about 1/2 inch cubes and the taste and consistency was fine. I also replaced the half and half with sour cream because that's what I had on hand. If you're using regular chicken broth, you don't need extra salt. Tastes great when topped with crushed tortilla chips!

Spinach Brownies
Very simple and delicious spinach side dish. I brought these to a potluck and everyone loved them. They are solid enough to cut into pieces, which is nice for serving. The only change I would make is to the name, since Spinach Brownies is a bit of a turn-off (perhaps Spinach Quiche Bars?). The only change I made was to use non-dairy milk (original almond) because that's all we drink, and they came out great. If you use frozen spinach (which I did), you can just thaw it and squeeze out the moisture before adding it to the mixture; you don't need to cook it first.
