I am a wife of 3 years and a mother of a young toddler approaching his terrible two's! I work full time and hopefully will be working toward my bachelor degree soon as I recently graduated with an associates. We recently moved to a new town and love it here and intend to remain here to raise our family. I prefer to provide healthy meals for my son, but sometimes convenience items over-rule. My hubby and my son both could live off cereal straight out of the box, so if I don't cook every night, I don't think anyone will notice but me!

My favorite family cooking traditions
We are still a new family with traditions in the making! So far it is just simple cinnamon rolls from a can on saturday mornings. Also, homemade pizza is a regular in my house, usually on the weekend.
My cooking triumphs
Fresh tuna noodle soup- basic chicken noodle soup recipe but substituted with fresh-caught tuna- it was a big hit with my hubby! I even used canned mixed veggies and it was still great!
cheeseburger manicotti aka italian enchiladas- didn't have everything for manicotti so I stuffed the pasta with hamburger meet and shredded colby cheese and seasoned with dill and added tomato sauce (and more cheese). It was a big hit with my hubby's coworkers!
My cooking tragedies
Never mix SPAM with tomato sauce!! I attempted a SPAM parmesan and it was like trying to eat dogfood! I am a newbie to SPAM (my hubby likes it so I decided to give it a try) otherwise I might have known better!
