Mexican Casserole
This was awesome - and believe me, with the soup involved, I was a bit skeptical. I did make a few changes: 1.Ground turkey with taco seasoning instead of ground beef and chili powder 2. Fat free refried beans instead of ranch beans 3. Smeared mild salsa on the top of each layer 4. Did half in normal cheddar, the other half got diced green chiles and pepperjack cheese 5. topped the entire thing with sliced black olives. This was VERY delicious, my two young children (2 and 5 years) LOVED it, and I will definitely make it again. Thanks for the great idea!
