About this Cook
I have traveled all over the world and tasted a vaste variety of foods. I love trying new dishes and consider an otherwise frieghtning appearence a challenge. I am a Firefighter so I do most of my cooking @ the Firehouse. My audience is quick to tell me their honest opinion and luckily I seldom get a frowning face. I love trying new recipes and am very receptive to learning new tricks. Although I like to have the kitchen to myself and rarely ask for help.
My favorite things to cook
Being the guy that I am, I definitely enjoy a good ol' summer grillin but enjoy cooking anyhting that gets a smile
My favorite family cooking traditions
Not much tradition in my family although my mom is outstanding @ Italian cuisine; which is my favorite. I don't even attempt to duplicate her dishes as it would never compare. Plus we all know that the best meal is the one prepared for you
My cooking triumphs
Anything that gets a smiling face is a triumph in my book
My cooking tragedies
Luckily nothing comes to mind here except for the time I forgot to add water to the pot when I was steaming esparagus. 10 smoke alarms later I decided to do broccoli

Salsa Chicken
I gave it 4 stars because it is so dang easy.. Lacked a bit in flavor for me. I made it as suggested but next time will experiment with fresh salsa and make my own seasoning.

Baked Spaghetti Squash Lasagna Style
I had to add a bit of italian ground sausage (bout 1/2 lb) for flavor and filling. The shells are a nice presentation piece but prefer to make it in a baking dish. Other than that it is a great twist on lasagna and I will def make it again. Lasagna is versatile; as is this. Have fun with it

Spanish Rice Original
Great recipe. I made a few changes due to a recent health kick: Skipped the bacon; put a little liquid smoke in w/ the olive oil I used to saute the onion. (worked well, think it added the smokey flavor that a recent rater said it needed). Used El Pato Jalapeno sauce instead of tomato for extra spice (Muey Bueno!). Used veg stock instead of chicken for less sodium and ommitted salt all together. Used 1 bell pep and 3 whole chiles. The big one was the QUINOA sub for the rice. Was a bit worried but turned out great. I have substituted quinoa in all my rice recipes and it is yet to let me down. Just monitor the moisture content as it simmers... Overall this was a very easy and versatile recipe with a good pay off
