Slow-Cooked Chili
This was such a hit at our house! I made it just as written, let it cook on low for 10 hours and the babysitter served it for dinner. The leftovers were even better the next day. This is a simply delicious recipe!

Mock Coconut Pie (Spaghetti Squash Pie)
I took this to work and there were some skeptics in the crowd, but after tasting it everyone wanted a)the recipe and b)a spaghetti squash from my garden! I used 3/4 cup sugar and only 2 eggs because I ran short...it was delicious, and easy to make.

Dutch Apple Pie with Oatmeal Streusel
I made this for work and the reviews were beyond positive. I went to get a piece after putting out in the common area and it was already gone, 10 minutes in! I used a frozen deep dish pie crust and baked it for 5 minutes before putting the apples in. I made my topping in the food processor and it didn't have that oatmeal look, but it tasted wonderful, and browned nicely without foil on top. The only thing I omitted from the recipe was the lemon zest. I used Gravenstein apples that made a beautiful inside, firm and tasty without being mushy. 5 plus stars!
