Chicken with Lemon Sauce

This was really good. I only used one egg & was able to bread 4 chicken breast halves. I served it with rice & green beans & a nice Pinot Grigio. Would be good with mashed potatoes, too. I would even make just the chicken without the gravy.

Swedish Meatballs (Svenska Kottbullar)

I only made the meatballs from this recipe, not the gravy. I also used groung turkey rather than beef & pork. That said, it's the spices that really make this recipe. I was afraid the meatballs would taste "odd" using spices usully reserved for baked goods, but it's actually really good. After baking the meatballs, I put them in a covered casserole with a can of cream of chicken & a can of cream of mushroom soup with some milk to make a gravy. I baked them for about 40 minutes & then served over egg noodles. Yum!

Terrific Turkey Chili

I don't usually like chili, but I LOVE this one. It's more of a taco chili than a regular chili. I did not add the zucchini, though, as it sounded like a weird vegetable to add to chili. My husband agreed. I did add one can of pinto beans as that seems more chili like than zucchini. I used low sodium beef broth & found the chili plenty salty. I also left out the chili flakes & used hot salsa instead. I will definitely be making this chili again.

Sesame Pork Tenderloin

My husband & I liked this. I used low sodium soy sauce & fresh ginger. I also increased the garlic to three cloves. I toasted the sesame seeds in a small frying pan until they were golden & aromatic. I marinated it for about 7 hours, but it would have been better if marinated longer.

Italian Herb Bread I

Delicious! I made this to serve with soup & it is one of the best breads I've ever made. I used my bread machine, so I halved the recipe & it turned out perfectly. Even my kids (who are picky eaters) loved it.

Tiramisu II

This is one of my favorite desserts, but I've made modifications. First, I double the amount of coffee & rum. I also double the amount of vanilla in the whipped cream & I sprinkle cocoa on both layers. There is a reason this recipe gets 5 stars. It is DIVINE!

Pineapple Banana Bread

This bread is really good, but sweet. It's more like a cake than a bread. I may make a cake out of it & frost with cream cheese frosting. I used 5 bananas. (When they start to turn brown I freeze them & thaw as needed.) I want to add coconut next time & maybe nuts, too. The recipe lends itself to replacing at least some of the oil with applesauce. Recipe is delicious as written but you can have fun experimenting to your taste, too.

Blueberry Pie

This is the most simple & delicious pie. I used fresh blueberries & served it with Lemon Ice Cream (also on this site). I made it for a friend's 40th birthday as this is her favorite kind of pie. It was devoured. Not too sweet & not too runny since I used fresh berries. I don't even like blueberry pie, but LOVE this pie.

Sugar Cookie Drops

These are good, but something is missing. I used 2 teaspoons almond extract & added a teaspoon of salt as others suggested. I skipped rolling them in sugar & added a bag of M&M's. I flattened them a little with my fingertips. The texture is melt in your mouth buttery, but I think they may need a tiny bit more salt.

Roasted Lemon Herb Chicken

This is pretty good. I zested the lemons & added the zest to the rest of the seasonings. I also put the lemon juice/oil mixture on the chicken first before rubbing in the seasoning so it would stick to the bird. After juicing the lemons, I put the rind inside the bird. It made it more lemony, but not overpowering.

French Onion Soup Gratinee

This soup is really good, but I used half chicken broth & half beef broth. I also only used shredded Gruyere cheese & I took the thyme leaves off the stem & left the leaves in the soup. I did not add the parsley & paprika, but they were not missed. Next time I may only use beef broth. I used low sodium broth & would recommend using full sodium broth. For the wine, I used a not too sweet port which gives the soup an interesting dimension, but may try a drier wine next time. As written, I don't think I would like the soup, but it's easy to adjust to your own tastes.

Old Fashioned Coconut Cream Pie

This is really rich & creamy, but does not have enough coconut flavor. I even added a half teaspoon of coconut extract. I may try using some coconut milk in place of some of the half and half.

Red Enchilada Sauce

Delicious sauce. I didn't have any salsa so added another can of tomato sauce & used only one cup of water. Great blend of herbs & spices. Was great on my beef enchiladas. I doubt I will buy canned enchilada sauce ever again.

Chicken and Chinese Vegetable Stir-Fry

This was really good. I forgot to add the sugar & pepper, but it wasn't missed. Also, didn't add the water chestnuts because we don't like them. Next time I will add ginger & mushrooms.

Best Ever Brisket

I followed directions, but mine came out dry. I also thought the chili powder was too much. May try it again with ancho chili powder. I wound up mixing the leftover meat with salsa & making enchiladas with it.

Pineapple Chocolate Chip Cookies

I was not impressed with these cookies at all. They are basically a chocolate chip cookie. You can't taste the pineapple at all.
