Guyanese Lime Cookies

These are like a lime snickerdoodle. Very different & really good. I used the small Pampered Chef cookie scoop & got 41 cookies. I also baked them for less time because I like my cookies more chewy than crisp. Great after a Mexican meal or in the summer. The lime makes them refreshing.

Cherry Poppyseed Twinks

These are good. I rolled them in little balls before make the indentation & they look more proessionally made. I also dusted them with powdered sugar. I may make them with lemon curd instead of jelly next time.

Pumpkin Whoopie Pies

Just made these today. Used the Cream Cheese Frosting II that others recommended. I got 43 whoopie pies using the small Pampered Chef cookie scoop. It seemed like a lot of spices, but really, it's not. May even add pumpkin pie spice next time. These are super soft. Make sure you store with waxed paper between pies or they will stick together.

Cider Cheese Fondue

This is so good! Great balance of cheese & cider flavors. I used sharp cheddar & my guests were putting this on everything. I served it with soft pretzels & apples, but we also put it on meat & pierogies. I might make it with hard cider next time for a new twist.

Round Steak Sauerbraten

This is really good. I don't like onion powder, though, so I just sliced half an onion & added it to the meat. I cooked it in the oven covered for a couple hours at 350 degrees & it was very tender. Served over egg noodles. Yum. Super easy, too.

Fresh Strawberry-Oatmeal Cookies

These cookies aren't very good. First, I did not need to add the 1/4 cup of milk & I added a 1/2 cup of flour because the dough was too wet. I had to bake them for 12 minutes & they are soft cookies - almost cake-like. It almost seemed like quick bread batter. In addition to the batter being too wet, the cookies just aren't very tasty. I will not be making these again. All you taste is cinnamon - not strawberry. I think I would leave out the cinnamon & add a teaspoon of almond extract instead of vanilla. I also added a half bag of mini chocolate chips & they are still bland cookies.

Grilled Ginger-Peanut Pork Tenderloin

This was okay. It was too salty for my taste & I didn't even add the extra salt. Next time I will use low sodium soy sauce. Also, I was hoping this would be more peanuty than it was. It was very juicy & my kids loved it, but the recipe is missing something.

Kai Kang Dang (Chicken Curry with Coconut Milk)

This is pretty good. I only had green curry paste & I didn't have the bamboo shoots or peppers, but I used a frozen stir-fry veggie mix & that worked well. I also only used one can of coconut milk & that seemed to be enough. I used dried basil, but it would be much better with fresh. It had a slight kick to it. I will make it again.

Sweet-and-Sour Elk

This is really good & a nice change of pace from my regular menu staples. I did make this the day before & let the meat marinate for 24 hours because I wasn't sure how tender and gamey the elk would be. I sauteed some broccoli & red pepper & served the vegetables & meat over rice. My two-year old LOVED it & ate three servings. I will definitely make this again & would substitute beef if I didn't have elk.

Lemon Posset

This is my new favorite dessert. As others suggested, I cut the sugar to 1 cup & added the zest of one lemon. I served it in small antique sundae glasses & topped with a splash of cream, 3 raspberries & a sprig of mint. All my friends were impressed & I raved about the fresh lemon flavor. Everyone wanted the recipe. I had no problems with it setting up. However, as I was making it, I thought it would be a great ice cream. Just cool, then put in the ice cream maker. Even if it is a custard consistency, you can still make ice cream with it. I might try this with lime, too, & serve it after a Mexican meal.

Grilled Mojo Chicken Salad With Asparagus and Oranges

This was pretty good. I didn't grill the asparagus because it was for a party & I grilled ahead of time. I steamed it, but it would be better grilled. Next, I used canned mandarin oranges rather than fresh. The greens part needs some jazzing up. Next time I will add feta cheese & either spicy pumpkin seeds or carmelized pecans. The marinade is great, but as a dressing, I thought it was a bit too much orange. I will probably add more lime juice next time. Very good summer recipe. All the women I had over for my patio party LOVED it. I also made Lemon Posset from this site for dessert & cucumber slices topped with dill seasoned cream cheese mixed with a can of crab meat for an appetizer.

Pork in Peanut Sauce

This was pretty good. I used low sodium soy sauce & low sodium chicken broth & left out the pepper flakes because I have small children. Next time I will use regular chicken broth because it needed a little more salt. Very quick & easy.

Cheddar Baked Chicken

I've made this twice now. The first time a written & the second time I used tuna steaks & parmesan cheese. Both were very yummy & even my kids (5 & 2 years old) gobbled it up. May try with halibut.

Italian Pork Tenderloin

This is really good. It's like something you'd get at an upscale Italian restaurant. The sage is an interesting flavor. Unless you knew it was in there, you would probably not guess what it is. I will definitely make it again as it was very easy to prepare. I served it over whole wheat angel hair pasta & with a green salad. Also pairs well with Merlot wine. Would be a good meal for company.

Caramel Brownies II

I don't think the baking time is correct on these. Mine turned out like bricks. I even kept an eye on them to make sure I didn't overcook them, but they still looked gooey when I took them out, so I thought they would be okay. The flavor is all right. Kind of sweet & not real brownie-like. I used pecans instead of walnuts for a more turtle brownie flavor, but they were not all that great. I doubt I will make them again.

I was very disappointed in this bread. The flavors were not very strong & it was too sweet. I mostly tasted the orange peel rather than bananas or strawberries. It was very moist, though.

These cookies are weird. They spread too much & I can't really tell if they are "done" because they look gooey even when they are done. They don't look very appetizing either. The taste is good, but I don't like the texture. Too crisp & chewy for me. I doubt I will make them again.
