Slow-Cooker Chicken Tortilla Soup
Very easy and tasty! The fact that you can throw in frozen chicken breasts just adds to the convenience.

Best Tuna Melt (New Jersey Diner Style)
Great recipe! The red wine vinegar worked surprisingly well. I did make one alteration and used portobello mushroom caps instead of the rye bread - delicious! Just brush the caps with olive oil and place them under the broiler for about 10 minutes - be sure to turn them halfway through.

Spinach Quiche
Fantastic and easy recipe! I took the advice of another reviewer and baked the piecrust for 5 mins before filling it. Also, I only used about 2 Tbsp of butter and cut back on the fillings - I didn’t want them to overpower the eggs. The combo of flavors was great - especially the feta cheese.
