About this Cook
I cook for crowds - at home there are 8 of us and at church usually 80-120! Surprisingly (and sadly) I have few leftovers.
My favorite things to cook
I like to bake. I don't do casseroles - grew up on 'em but don't have time to assemble. Meat, starch and veggie...slow cookin'...oven...quick and easy skillet dishes with sauces are my thing.
My favorite family cooking traditions
I am Dutch and they are not known for being good cooks! So, I've learned independently and have a husband and children who put up with my inventive, explorative experiments. I love international foods - pickled cactus is a great side dish! I did grow up with sweet and sour red cabbage cooked with diced apples - that is a given with turkey at our house, as are monthly apple fritter feasts!

Tex-Mex Beef and Cheese Enchiladas
Terrific! I make dinner for 80-120 people and had 1 gallon leftover spicy chili, so I just lined 3 chaffing dishes with corn tortillas (not fried) and layered on top: 6# shredded cheddar cheese, 1 gallon chili, 6# shredded pepper-jack cheese and sliced black olives. Served with tortilla chips, salsa and sour cream and "mexican bean and rice salad" (with avocados and lemon). It was de-lish!
