Zucchini Pancakes
I was pleasantly surprised to find how good these pancakes are! This recipe is low carb compared to standard breakfast pancakes and so much more healthy (I left the extra butter out)! I baked them in my waffle iron and served them with fresh strawberries. Since fresh fruit is plentiful in the summer-time, next time I will serve them with multiple choice of other pureed fresh fruit and perhaps a dollop of whipped topping. I will definitely keep this recipe!
