Mexicali
This was pretty good, especially for how easy it is. I omitted the chile peppers since they weren't on hand. I added bell peppers. I also added some potato because i had it left over. I only put about 1/3 of the tortillas ontop of the chicken, bcs i didn't want it too mushy. The rest of the tortilla strips I put on top, and topped that with the cheese. This added a wonderful crisp! My husband said he would have liked it with beef instead of chicken - i might try that next time!

Mini Meatloaves
3.5 I made it as directed, except in a muffin pan. I used another reviewer's tip of letting the oatmeal/milk mix sit for a bit to soak up some slushiness. The sauce was WAY too sweet, I would definitely cut back on the sugar! It also lacked spice, I will definitely add onion and spices if I make again.

Chicken Tetrazzini for a Crowd
3.5 This was pretty good, but not a Wow recipe. I did make some modifications: I scaled this recipe down on the website, and used some low fat ingredients for health. I used 1 crm of mushroom and 1 crm of celery. Because I like veggies I added some onion, celery, and bell pepper which I sauteed with garlic. And I couldn't resist adding a bit of sherry as others suggested. I did reserve some of the cheese for the top, and added crushed crackers on top of that - this provided a crust which was the best part of the dish. I will probably make again, but I'll try to snaz it up some.
