My fiance gave this a 4 star rating but I thought it deserved 2 1/2...way too much coconut topping. The burger was moist but I thought all of the coconut (though I love the flavor) dried it out. I thought the cilantro flavor was a bit too much and it needed more lime flavor to it (neither of us tasted it and I put the juice of 2 limes in it).

I was able to make 18 muffins from this recipe. For the first 12 I followed the original recipe. However, I desired more texture and flavor from the corn so for the last 6 I added 1/2 cup corn kernels and 2 T. melted butter. They were absolutely wonderful after those additions. Next time I make them I will add 1 can creamed corn, 1 can whole corn, melted butter and a dollop of sour cream for a nice zing. Goes perfectly with sweet potato soup! :-)

A-MA-ZING!!!!! Perfect balance of flavors!! I handed them out as presents and everyone loved them and asked for the recipe. This is by far my favorite recipe. I made them yesterday, ran out and made some more today. :-) Thanks for the best cookie recipe!!
