Spinach Mozzarella Meatloaf
I needed a recipe to make with my farmers market spinach and this was a great choice. Very moist and easy to make with ingredients you can find often in the kitchen. I took others advice and added garlic powder, pepper, salt and basil. I'll definitely make this meatloaf again.

Quick and easy to make after a long day at work. It's hard to find a recipe that makes a delicious and hassle-free meal for one - and this does.

Pineapple Coconut Bars
I made this dish for a graduation party and it was a rave! People loved the light, refreshing taste on a warm summer day. I would certainly top it with vanilla bean ice cream next time I serve it in a smaller setting.
