Chicken Enchilada Casserole I
A few changes and it was great! -Omit chicken broth -Use shredded cheddar cheese layered on top of chicken mixture -Saute onions beforehand Also, I prefer to shred the chicken rather than cube it. Was the perfect consistency with the changes!

Chicken and Stuffing Casserole
This is such an easy and delicious recipe! I only changed one thing... I reserved some of the stuffing to sprinkle on top - this adds a bit of cruchy texture and a nice appearance. Also, I covered it until the last 10 minutes and it was perfect! I will be making this again for sure!

Banana Nut Muffins
Very moist, great flavor, but changed a few things. Added a tsp. of vanilla extract and a dash of cinnamon, but omitted the lemon zest. Also added a tbsp. of sour cream as I do with banana nut bread. Turned out great, will definitely make this again!
