Fluffy Pancakes
Here's my Gluten Free version. Used Bob's Red Mill GF all purpose flour and added 1/4 tsp. xanthum gum. Also added 1 tsp of pumpkin pie spice, just 1 TB sugar, 2 TB flax seed and 1 tsp vanilla. Enhanced it with flax seed for kids sake. Delicious. Everyone agrees it's delicious and I think it's the best version of GF pancakes, hands down, that I've made. Made recipe twice in 4 days it was so good!
