Zucchini-Chocolate Chip Muffins
these are so yummy! i did make a few changes though. i doubled the recipe because i had 2 zucchini i had to use up. i also had two over ripe bananas, so i added those as well. i added the mashed bananas to the oil mixture before adding to the flour mixture and it worked out well. I also put half a bag of mini chocolate chips in. instead of making muffins, i put in two loaf pans. i had to bake it at 350 for 1 hour. next time, i may reduce the amount of oil and/or milk if i add the banana -- that way it shouldn't have to bake as long. but as it is, it is extremely delicious and very moist. yummy!

Spiced Butternut Squash Soup
this was fantastic!!! i followed the suggestion to use apples instead of potatoes and i have to say, it was genius. i don't think it would have tasted quite so flavorful if i had used the potatoes. a+++ for that. i halfed the recipe (because i used half of the squash to make baby food) and used a 32 oz carton of chicken broth. i still used the full amount of spices and it tasted wonderful! highly suggest if you like it spicier. overall this was an awesome soup! i will make it again over and over.
