Mocha Chocolate Chip Banana Muffins
These muffins are AMAZING! My younger brother said that these should have six stars. ;) I did take the advice of some of the other cooks and added about double the coffee. I also reduced the butter by 4-6 T. or so and added some milk as it was pretty thick. I did about 1/3 wheat flour and cut back the sugar (3/4 white and 1/4 brown). I also put some sliced almonds on top, which added a nice touch. They are great. So dessert-like that they're almost too sweet for a breakfast. They would be great for a brunch.
